|Local to Litchfield County, Executive Chef, William Schwalm, first became interested in cooking at the age of sixteen while working at Nico’s Restaurant, in Waterbury, CT.
Soon after graduating college, William work at Deer Island Gate Restaurant, Bantam, CT., Hasting Hotel, Hartford, CT and then move on to the Dolce Heritage Hotel, Southbury, CT. William continued working at the Heritage after Dole sold the Hotel to WNW where he continued to learned to shaped his style and approach to cooking. Simple, honest cooking based on using quality products and sound technique.
Over the past several years William has also participated in various fund-raiser’s including Regional Hospice of Western Connecticut (2008 to 2013); Tasteful Event benefit the Southbury-Middlebury Youth & Family Services http://www.youtube.com/watch?v=QjGs-VlQ258 (2009 to 2012); Southbury Volunteer Firemen’s Association Chili Cook Off Fundraiser (2013) and so on.
When he’s not working, William is off to Newport, RI to enjoy the ocean, cooking at home, playing golf, thinking about his next trip to explore the nature wonders, gardening in the backyard and spending time with his nephews and family.
